An immersive, hands-on preservation workshop rooted in my garden, my vineyard and late-summer abundance. You'll leave with jams, salsas, pickles, and skills you'll use in the future. Plus, a deep-rooted connection to the land. The class will run from 10am to 5pm both Saturday and Sunday.

About the event
Day 1- in the morning we will begin by making a blackberry jam and a raspberry jam. Skills covered - proper sterilization, pectin vs. no pectin methods, sugar ratios + balancing acidity, and safe sealing techniques. Then we will break for lunch that is provided. In the afternoon well will learn about pickling and garden canning. We will make a batch of pickling dill cucumbers as well as some pickled green beans. After that we will go over the basics of general garden canning. Skills covered- Brining techniques, safe vegetable canning basics, Long-term storage+ shelf life.
Day 2- in the morning we will begin with making a hearty garden salsa to can. We will go over vinegar ratios, pH safety, balancing heat, sugar and acid- Plus batch scaling for events or gifts. Then we will break for lunch. After lunch we will begin our pepper jelly. At the end…
